Hey you chocolate lovers out there! I’m very glad to pass this recipe on to you, this cake was always very popular on birthday parties I made it for, for my birthday this year I got an oven from my roommates, and as this cake was the first thing I did in this oven (twice!) and even with the few facilities I have over here in Vietnam and in spite of a few missing ingredients, it still turned out very yummy each time. It is very rich and moist, that is what surprised everybody the most, as spice cakes often tend to be quite dry.
I will give you the ingredients and instructions for a plain chocolate spice version, and 2 already approved variations afterwards.
Okay, have 3 bowls ready for the following:
– 1 cup of boiling water
– 1/2 cup cocoa powder
– 2 cups flour
– 2 teaspoons baking powder
– 1 teaspoon cinnamon
– 1/4 teaspoon nutmeg
– 1 teaspoon salt
(- 2 teaspoons cardamom or clove for the extra spice kick)
– 1 1/2 cups brown sugar
– 1/2 cup granulated sugar (if you can’t get brown sugar, it’s alright with just the regular one.)
– 1 cup vegetable oil
– 2 large eggs
– 1 tablespoon vanilla extract
Mix these 3 parts together and finish up adding the flour and the cocoa mixture alternatively to the sugar mixture.
First variation for this wonderful cake is mind blowing, I promise, that’s how I would suggest doing it every single time:
– Pears & Almonds – Add 2-3 diced pears and 1/2 cup chopped almonds to your dough. Absolutely fantastic.
Second would be Bananas! Chop a banana in your dough. Very good!
Third: Add more chocolate. Just divide a whole chocolate bar up and add it to your dough, will add some chocolate bomb surprises to your already rich chocolate cake. Wow try white chocolate, that should be awesome!
Fourth: M&M’s! Everybody will be asking you about the weird color, but as soon as you tell them what it is, they go nuts about it and taste is great.
That’s all so far. Oh and by the way, last time I baked this cake, I had 2nd, 3rd and 4th version in it…..
