Rainy Sundays were made for French Onion Soups

The easy way.

Let’s say, a while ago, you cooked a huge Pork knuckle. The broth that resulted from this you of course, saved in your freezer.

There you go. The perfect base for a tasty French Onion Soup!

Exactly this was the case yesterday, over here in Vancouver. So what my boyfriend did was just slicing huge onions roughly and roasting / steaming them with a little cube of butter (let’s say a good tablespoon) on the bottom of the pot.

Steam until onions turn soft and transparent (if you prefer your onions roasted and crunchy, use a bigger pot, more heat and roast them). Then add your pork broth to it and let it cook for about 30 minutes. You can add some rosemary, if you want to.

Go and buy some fresh French bread. Slice off some pieces, put cheese on top, and bake in the oven until crunchy (almost croutons)!

Soup in a bowl, baguette on top, et voilà!  :)
