Today was one of those days. I ate… a lot! Food truck serving vegan burgers and fries that kick ass… in my small town of home! Being over-fed by a friend I haven’t seen in a long time. Muffins. As I realized that I also ran, cycled and did a good yoga workout, I thought that was reason enough to pound down the leftovers of THIS. And I am not regretful :)
Uhlalilala. Gnocchi. Already wicked enough. But. In a creamy cheezy VEGAN avocado pesto with steamed and refried broccoli and white beans. Need I say more?? Nutritious but most of all – delllllicious.
For the Creamy Cheezy Raw Pesto that will be added at the very end:
Cream (however you do it…magic bullet, blender, processor, you name it)
A handful of fresh basil leaves
3 Tbsp Lemon Juice
1 Tbsp of Nutritional Yeast
1 Garlic Clove
A pinch of Salt and Pepper
When creamy as down below (oh oops that sounds bad- I am referring to that photo), add some sesame and the zest of one lemon. Lick it, roll your eyes. Prepare the rest.
Steam Broccoli. Heat a pan, fry thin sliced onion in some oil. Add the broccoli and white beans, toss with black pepper and any seasoning of your liking (we had some super tasty lemon pepper and parisian pepper that included paprika and other goodies).
Boil your Gnocchi. Dump the water. Mix everything well in the pot. Enjoy! Should serve up to 4 people easily with a salad at the side or some appies.
